Rice paper rolls could be great healthy snack

Fresh and healthy snack for whole family

When you see how easy it is, you’ll want to make these tasty rolls often. Add vegetables and herbs of your choice. You can also add chicken, shrimp or grilled tofu, leftover duck! Use your imagination and experiment with different fillings!

INGREDIENTS

  • thin rice vermicelli
  • seasoned rice vinegar
  • rice paper wrappers
  • small leaves leaf lettuce
  • chopped peanuts or cashews
  • sprigs fresh basil and fresh coriander

Place rice vermicelli in a large bowl and cover with very hot water. Allow soaking for 15 minutes. Drain well—toss noodles with seasoned rice vinegar.

Dip a rice paper in a bowl of hot water for 10 seconds. Then, lay on a damp towel.

Place a lettuce leaf, a heaping Tbsp peanuts, a heaping Tbsp rice vermicelli in a compact pile at one end of rice paper. Top with a sprig of basil and coriander.

Roll up tightly to make a sausage.

Serve with a Thai Sweet Red Chili Sauce.

Note: The rolls can be made up to 3 hrs in advance. Cover with a damp towel until serving.
